Autumn-harvested sencha, picked at full maturity, naturally develops lower caffeine while yielding a softer, more rounded structure.

Leaves are selected for consistency, allowing heat to be applied evenly throughout the roasting process. This preserves clarity while gradually building depth and aromatic complexity.
