Sayama Kaori is a distinctive Japanese tea cultivar known for its rich aroma and refined character. Originally developed in Saitama, Japan, this cultivar was officially registered in 1971 and selected from naturally crossed seedlings of the renowned Yabukita. It was developed for its strong adaptability to cooler growing conditions, while maintaining excellent tea quality and a distinctive aromatic character.
Our Sayama Kaori is carefully cultivated in Wazuka, Kyoto, one of Japan’s renowned tea-growing regions. The tea plants are grown under Kabuse shading, a traditional Japanese cultivation technique in which the tea plants are covered to reduce direct sunlight for more than 21 days. This allows the leaves to develop greater depth, natural sweetness, and a refined aromatic character before being harvested during the first flush in May.
The leaves are carefully processed and traditionally stone-milled into a fine, vibrant green powder. The result is a matcha with a smooth green character reminiscent of fresh green pea, followed by soft steamed pandan and sweet potato notes. Rounded sweetness is balanced by a savoury umami depth, with a medium-full body and a silky finish. Gentle bitterness adds structure and balance, while the astringency remains minimal.
